Yea! Down 6.3 lbs and feeling good.

Well, I didn’t cheat yesterday.  Well, I did have 1 tater tot and that is cheating, but I did remarkably better than the day before… and I was rewarded for it.  I am now down 6.3 lbs and a little bit lower than I was before fat-loading.  It’s so frustrating not to be able to fit into pants that I was wearing at the beginning of November.  How do I gain weight so fast?  Oh yeah, turkey, dressing, yeast rolls, sweet potatoes, corn casserole, pumpkin pie, cookies, egg nog…

My energy was low yesterday and I was in bed at 9:15 with my 6 year old asking me why I wasn’t answering her when she was talking to me.  Because I’m trying to sleep!  I woke up with better energy today and only time will tell what the day holds.  Feeling positive!

Recipe of the Day- Strawberry Slush

4-6 Strawberries
1 cup of ice
1 packet of stevia
¼ cup of pasteurized egg white
Vanilla Crème Stevia to taste

Blend crushed ice, strawberries and egg together in blender until smooth.  Add packet of stevia and Vanilla Crème stevia to taste.  I use a snow cone maker to shave the ice first and then blend it all.  It comes out delicious and frothy- kind of like a Strawberry Julius.  Sometimes I use less strawberry and add a half of a Clementine orange or just use oranges.  The strawberry is my fave, though! 

Calories: depends on how much fruit you use so weigh and measure.  Usually less than 50 cals.

Loser already!

Wow.  I had some wine last night.  I am so weak.  Then to make up for the wine and cut out some calories I only had 2 ounces of chicken for dinner so now I am starving!  I'm ashamed that I couldn't even make it one day, but I am not going to give up.  I'm getting back on the wagon.  


I am tired and grouchy and I know it's because my body is detoxing from all of the carbs and sugar.  I'm craving something sweet like nobody's business.  I just feel like something is missing from my life.  Sad.  I am looking forward to when I start feeling good. 


For the record, I weighed in yesterday morning at 167.6 after all the fat-loading.  This morning I weighed 163.8. So I have lost 3.8 pounds- essentially what I gained during the fat load.  


Recipe of the day- Spicy Lemon Dressing


1 T. lemon juice
1 T. red wine vinegar
1 T. pasteurized egg white
1/8 cup finely diced onion
2 dashes of Cholula brand hot sauce
black pepper to taste


Whisk all together and enjoy over arugula.  Yum!

Half-way through day 1 of VLCD

All of the gung-ho excitement of this morning has transitioned into feeling tired, dehydrated and discouraged.  Really?  So soon?  Well, the first couple of days are tough and I plan to hang in there.  It's going to feel great when the weight starts coming off and I know it will be worth it.

I'm planning on going home a cooking my chicken breast and eating an arugula salad with cherub tomatoes and onions.  For dressing I will experiment with my lemon juice, vinegar and spices.  We'll see how it turns out!  Normally an evening like this would be topped off with a nice glass of vino.  I will have to settle for...I don't know, lemon water or something?

And here we go!

Let me introduce myself!  I am someone who has battled my weight my whole adult life.  Since having my twins in 2005 I had never been able to get back to my pre-baby weight.  After a successful round of HCG almost a year ago I got down, briefly, to 136.  I maintained at a range of 141-145 until about October.  It went downhill from there and I am now starting another round of the HCG diet protocol at 162, pre- fat loading.  My body needs a detox because the sugar and alcohol are back in my life in a big way.  I love peanut butter and I love wine, but we are parting ways for 40 days. 

So I fat-loaded over the weekend and for this round it wasn’t such a stretch.  I just ate the same ol’ crap I’ve been stuffing myself with over the holiday season, I just didn’t feel (as) guilty about it.  When I fat-loaded last winter it was shell-shock for me because I had been on weight watchers for months and couldn’t imagine eating all of that fatty, carb-filled food.  The scale told me this morning that I gained about 3-4 lbs from fat loading which is nothing compared with the 8 lbs. I put on last time.  I seriously look like I’ve got a baby bump.  I am hoping to be able to fit back into my size 10s by the end of the week.  Fingers crossed!

I was so excited to shop for my foods.  I got 2 lbs. of extra lean ground beef (which I froze in individual packs of 3.5 oz.), chicken breast, little pieces of sirloin for kabobs that will be easy to freeze individually and a big head of red cabbage. I live on cabbage during this protocol and then have salads intermittently.  I am really ready to get skinny again and my enthusiasm is HIGH!

Recipe of the Day- Italian Beef and Cabbage

3.5 oz of Lean Ground Beef (96/4)  Calories:  131
1/8 cup onions, uncooked   Calories:  19
2 T. of tomato sauce (about 1/3 of a small can)   Calories:  20 
2 C. chopped red cabbage    Calories:  55

Brown ground beef with onion to season.  Prepare cabbage in either a micro steamer or over stove top.  I love my Pampered Chef Micro Steamer!  Once cabbage is soft and meat is cooked through, toss it all together in skillet with the tomato sauce.  Liberally season with sea salt and red and black pepper and enjoy!

Total calories for meal:  225

You will be surprised at how large a portion this makes.  Cabbage is a great, low-cal filler.
